Chef Roberto Cortez Hits BreadBar’s Hatchi Series Tonight

Chef Roberto Cortez will be tonight’s guest chef at BreadBar’s Hatchi series, the one-night cooking showcases organized by Chef Nori of Ironori Concepts for lesser known, but gifted chefs. El Paso-bred Cortez lives in Los Angeles and is the consummate personal chef, having worked for Microsoft’s Paul Allen and Eddie Murphy, among other celebs. He also runs an underground series of estate dinners in Santa Barbara called Billionaire Dinner Group. Design is critical to his molecular preparations, as evidenced by his “Chocolate Drug” hypodermic of Amedei chocolate, Thai spice cherries, Newcastle, honey and malt, plus the formation of a group called One Part Chef, Four Parts Design which explores ground-breaking dessert artistry. Tonight, Cortez will cook the following intriguing plates at BreadBar, each costing just $8:
