Heritage-inspired menus are being celebrated by Debbie Lee at Gyenari and Ilan Hall’s The Gorbals (finally opening on Friday), but are nothing new for L.A. We found a few big names that draw inspiration from their family meals for your eating pleasure. Despite an unusual presentation in a rounded glass, Chef Jose Andres sticks to traditional flavors in his Gazpacho Estila Algeciras, which takes a recipe from his wife Patricia’s southern Spanish kitchen at The Bazaar. Cairo-born Chef Michael Mina turned to his mother’s falafel recipe for his version of a veggie burger, currently available at XIV on Sunset. But really making Mama beam brightly is Wolfgang Puck, a butcher’s son raised by his pastry chef mother, Maria, who taught the boy to cook (thank you!). Puck has long touted traditional Austrian favorites at his restaurants, like sweet kaiserschmarren pancakes and veal wierner schnitzel, two treats that delighted Wolf as a cub.
