There are five nights left at LudoBites, the pop-up at Royal/T where chef Ludo Lefebvre cooks capriciously with disparate ingredients, striving for the heights of sensual indulgence. Selling out in two days, not everything has gone smoothly. After Ludo and wife Krissy returned from shooting Top Chef Masters last weekend in Puerto Rico, their sous-chef vanished when the doors opened (Dr. Drew, who visits every night, calls that "addict behavior"), leading to an improvised prix-fixe and the offered hands of friends like Quinn Hatfied. Back to business, Ludo says the menu of ten plates is mostly fixed now, as changing daily caused too many headaches. With creations like a foie gras beignet and a sauteed Monterrey squid with chorizo oil and kim chee puree, those who secured a table had their eyes opened and their senses lashed, mostly in a good way.
