Joseph Gillard, the Napa Valley Grille chef we recently saw organizing the locavore community, is preparing monthly, 25-seat-only wine dinners for spring, starting next Friday with four courses of lamb sourced from what he calls “Mystery Farms.” Don’t be scared little ones, that’s not a real place, but Gillard is attempting to keep his source secret while he’s apparently got the good shit. Fortunately he’s not calling it “mystery meat” as well, but swears the lamb is organic and sustainably bred. All the monthly dinners will be variations on this theme of bringing Cali wines together with local, responsible, and mostly organic meat producers. Next month is a “Pig and Pinot” pairing using precious Mangalitsa porkers. Napa Valley Grill’s “spring lamb menu” is below with details.
