What Does Jonathan Gold Want You to Try Before You Die?

L.A. Weekly is publishing its new restaurant issue this Thursday, helmed by its number-one stunner Jonathan Gold. Not to be confused with his “99 Essentials List,” the cover story will be “99 Things to Eat in L.A. Before You Die.” Muhahahaha! A great dish-specific concept this go-around that gives Gold the chance to do what he does best, finding far-out dishes in far-off nooks and picking the best version to be had among a few choices for each. So what do you think he will he pick?

Squid Ink provides a glimpse at two of Gold’s suggestions, with Urasawa’s fugu and goat’s milk gelato from Bulgarini recommended before your date with the Reaper. Since we’ve seen those spots show up before on Gold’s “Essentials,” we predict he’ll also find a way to work in Nancy Silverton and the Feniger-Milliken partnership, and imagine that old favorite El Parian will be pushed for its birria while Kogi and Langer’s take deserving shout-outs. We could also see Guelaguetza’s moles make the list, Nobu’s sushi, pork belly at Park’s, and naturally something from Jitlada, while hoping he nods to favorites like Mo-Chica, Pollo a la Brasa, and Huarache Azteca for their signatures.

What do you predict Gold will recommend as an “Eat-Before-You-Die” dish in L.A.? The wings at Kyochon? Ramen at Daikokuya? Pho at Golden Deli? Fried chicken from Chung King, Larkins, or LudoBites? And which burger is going to make the cut?
