Slideshow: Sublime Food Lounge Opens in Culver City

Sublime Food Lounge is now open on the eastern edge of Culver City in a slim space of dark chocolate wood and dark grey concrete, with a sliding glass wall open to Washington Blvd. and a massive movie screen showing vintage foreign flicks over its bar. Not just a neighborhood hangout, the witty cuisine of passionate chef Randall Rosa is a timely combination of several cuisines currently grabbing L.A. by the taste buds. While the modern global menu appears rooted in Italian flavors and bistro attitude, Sublime heaps modernity on to its Medi-influenced menu with the kind of innovation that might make Culina and Marcel Vigneron's Bar 210 take note. So what's cooking at Sublime?

In addition to house-cured salami and fresh salads with wild mushrooms and burrata, guests can expect such novel creations as foie gras French toast, crispy confit veal riblettes, smoked salmon with fried capers that comes to the table in a smoke-filled chamber, and seared scallops with cashew foam, fennel flan, and blood orange gastrique. There is also a banana burrata alfredo and gelato with olive oil "snow"for dessert. Completing this collection of current hits, there are takes on popular bone marrow and flat breads too, the latter bearing options like squash blossom with honey or linguicia chile.
