What to Eat at Culina, Open Today at Four Seasons Beverly Hills

Today the Four Seasons opens Culina in Beverly Hills, the hotel's final nail in a multi-million dollar refurbishment that finds this modern Italian restaurant replacing the former Gardens. The massive space weaves together two outdoor patios with a large dining room, one VIP lounge, and two private rooms, with a live crudo bar, glass wall wine cellar, stunningly back-lit apertif bar with bottled limoncello on tap, and a "floating" sculpture of glass baubles over its leather booths. So what is being served at Culina?

The menu is diverse, ambitiously striving to include a bit of everything and hoping for the same success Mozza and Cecconi's have experienced with their modern Italian menus. It includes everything from cheese, house-cured salami, and vegetable small plates, to pizza, panini, pasta, gelato, cannoli, and meat courses, with each category nicely edited to about six selections each. Inspiration abounds, from a lobster knuckle and black truffles in gnocchi to antipasti and salad plates touched with micro veggies or a scallop with Sambuca. At a crowded opening for hotel guests we attended last night, the room temperature crudo, with over-salted ahi and star-anise flavored yellowtail, though beautiful, were underwhelming next to the plates of burrata peperonata, arancini with ideal crusts, and bistecca alla Fiorentina prepared by chef Victor Casanova.

Overall, Culina keeps its menu rooted in tradition with an occasional flight of fancy. Could live crudo become its biggest draw or will squid ink spaghetti with cardamom and panini with salsa verde send guests fleeing to Gino Angelini? The grand space is certainly perfect for a Four Seasons, now we will await to see if Culina can take its place among L.A.'s notable Italian restaurants.
