Remember the sound-minded decision to close Stinker’s and scrap the truck-stop vibe last January? In it’s place comes Thirsty Crow, a bourbon bar due this weekend from Bigfoot Lounge, Saints and Sinners, and Little Cave’s 1933 Group. While there will be some quality beer, small-batch bourbons and sustainably sourced bourbon cocktails will keep this crow aloft, reports Daily Dish. This makes it the next addition to the hyper-specific spirit niches we’re seeing emerge, like at La Cana and Descarga with rum, mezcal at Las Perlas, and Adolfo Suaya’s forthcoming Te’killa that Eater mentions. It also joins a growing list of attitudinal animal names turning local listings into a barnyard, from Downtown’s Lazy Ox to Montrose’s Three Drunken Goats, or where the two trends come together, at craft beer-obsessed Surly Goat.
