Palihouse Hires Gary Menes as Exec Chef

Huge news for The Hall at Palihouse, which hasn’t made much of a squeak in a while. L.A. Times reports that gifted former Palate and Marche toque Gary Menes is now the executive chef at this West Hollywood restaurant, news that’s already announced proudly on its website. Brendan Collins was last found manning the stoves here last before opening Waterloo and City this month, and was a natural fit as a natural-born Brit. We’re pretty surprised to see Palihouse make the brilliant move of snatching up Menes, but he’s naturally doing things his way here, in this case driving French bistro dishes with the seasonal vegetables that are his milieu, and of course, updating the menu weekly. That should be quite refreshing for a chef who’s spent a spell retooling menus daily. Check the new eats out on The Hall’s website while we rejoice that Menes has resurfaced so soon and so centrally for L.A.
