The first California location of Seasons 52 is due at the end of August at O.C.’s South Coast Plaza. The restaurant announces itself via press release, putting us onto this grill and bar concept that changes its menus with the seasons. The new location, the first west of the Mississippi, will be a 300-seat venue with an open kitchen, a circular piano bar, and a large patio in front with two fire pits. The menu is designed by 52’s culinary director Clifford Pleau and the cuisine will be overseen here by executive chef and partner Tim Kast, while George Milotes plays sommelier with a selection of over 100 wines. Wood-fire grilling and brick oven cooking help turn out an assortment of signature recipes of flatbreads, salads, seafood, poultry, and meat plates that go heavy on the local ingredients, serving such entrees as caramelized sea scallops with sun-dried tomato pasta and roasted asparagus or Fieldale Farms chicken citron. Special dietary needs will also be met, while weekly specials will take their inspiration from farmers markets. Look for Seasons 52 to debut Monday, August 30th or shortly thereafter, and in the meantime, track its construction on Twitter.
