Roughly seven months after chef Joshua Smith stepped in to fill Walter Manzke’s humongous shoes, and less than two months after S. Irene Virbila removed a few of her stars from Church & State, the restaurant sends us notice that a new chef is in the kitchen. Jeremy Berlin is a vet of both New York and West Hollywood locations of Gordon Ramsay at the London, and his resume includes stints at Le Bernardin, Fleur de Sel, and Payard Patisserie. Berlin will now be found nightly at the Downtown restaurant. Looking to some big names in French food, owner Yassmin Sarmadi is no doubt hoping Berlin will bring the astute touch with Gallic cuisine that Manzke graced Church & State with. Stay tuned for an update on Smith, whose pig’s feet we went nuts for at The Taste of Beverly Hills.
