Casa Chef Alex Moreno Pays Homage to Pal Cabron’s Clayudas

Casa, the Bunker Hill restaurant that completely turned its contemporary Mexican cuisine around under chef Alex Moreno, has a new winter menu. Continuing his quest to honor local taquerias and neighborhood eateries, Moreno plans two variations on the clayudas served from the Guelaguetza family at their Cemitas y Clayudas Pal Cabron. Choose from either a twelve-dollar version of this “Oaxacan pizza” topped with chicken tinga, chile arbol-infused black bean puree, and three cheese, or a fourteen dollar version with short rib, Oaxacan and manchego cheese, caramelized onion, and roasted tomatoes. Yes, you can buy one for six bucks from a truck, but it probably won’t be as good as the ones at the above-named restaurants. A map to Pal Cabron also accompanies the dishes, drawing attention to the Lopez family’s restaurant and absolving Casa of any copyright infringement guilt.
