Blue Ribbon’s Bruce and Eric Bromberg Go Hollywood

If there’s one thing we dig about the corporate embrace of celebrity chefdom, it’s how companies are exporting well-regarded toques from other cities into our own, be it Absolut dropping Grant Achatz off at MacArthur Park or Marcus Samuelsson cooking this Saturday at Bazaar while promoting Buick. In this vein, Blue Ribbon chefs Bruce and Eric Bromberg appeared in Hollywood last night to launch a bar menu of some of their greatest hit dishes, now available nightly at The Renaissance. After eighteen years of expansion solely in New York, the chefs partnered with the hotel group to bring their cuisine nationwide, training staff and sourcing the ingredients themselves in each city, even to the point of making their own bread when they couldn’t find a worthy example in D.C. After opening at Las Vegas’s Cosmopolitan Hotel on December 15th (for which Bruce is moving his wife and daughter indefinitely to Sin City), the chefs plan to roll out similar small plates menus in other U.S. Renaissance locations in 2011.
