Brian Malarkey (aka the Top Chef vet in the the hat who’s not Spike Mendelsohn) is following up on his San Diego restaurant Seersucker with an Asian-inspired non-restaurant, to opened in July in Del Mar. Eater calls this one a “social dining experience” that has an Asian cowboy theme and goes by the name Burlap. That’s all funny for several reasons. There will be a helluva lot of food here for a non-restaurant including tartare, “carpaccio, uni, oysters, yellow-tail collar, rotisserie duck, quail, prime ribs with different glazes and brines, and yuzu-steak with ginger butter.” Sounds good, but what’s with his obsession with fabrics?
