Walter Manzke Enters The Chef-Driven Fried Chicken Thunderdome

Fine-dining chefs like Ludo Lefebvre, Mark Gold, Joseph Mahon, Susan Feniger, Jon Shook and Vinny Dotolo, and Laurent Quenioux have all made something of a splash in L.A. with their own personal fried chicken recipes. Now, Le Saint Amour lets us know that heavy-weight chef Walter Manzke is following in Flavor Flav’s steps and entering the fray with one of his own. Manzke, currently consulting for the Culver City bistro, recently took a trip to Paris and came back to endow the restaurant with seven different nights of bistro-style dining specials, starting with his poulet frit on Sundays, served with fries, piment d’Espelette, cabbage slaw, and seasonal vegetables, and stretching through to Saturday’s serving of filet mignon Bordelaise, with appearances from braised Kurobuta, bouillabaisse, and pan-fried veal escalope in between. The specials can be purchased a la carte or added to a dinner of salad or soup polus dessert for a flat $29.
