Chef Tim Goodell (Meson G, 25 Degrees, Red Pearl Kitchen) is back in the kitchen, specifically Public Kitchen and Bar, the chef's new restaurant that opened Monday in the Hollywood Roosevelt. Here Goodell is cooking a stripped-down menu that pairs ingredient-centric market cooking with gastro-pub cuts and splashes of subdued invention. Stand-out dishes include an oxtail galette placed below a soft poached egg (in fact, any entree commendably has the option to add egg), while some of the recipes sampled during a recent test dinner revealed the need to tone down the salt and bulk up the intrinsic powers of the produce. The space co-mingles classic Hollywood club touches with old European accents, vintage and futuristic fixtures, and a recently unearthed ceiling mural, though anyone who ate at Dakota Steakhouse would still recognize the layout of the room.
