First, it was the Adrian Pasdar-inspired, off-the-menu "Pasdar" that John Henson likes so much, and now it's chef Kevin Napier's mescal oyster shooter, a drink-it-in-one-shot mixture of mescal, bourbon-infused cocktail sauce, and preferably a Kumamoto oyster, with a head of salt air foam.
