Walter Manzke Plans République in Downtown Next Spring

In huge news that L.A. has been holding its breath for since the chef departed Church & State, Walter Manzke announces plans to open a restaurant named République in an 8,000 square-foot Downtown warehouse in the Factory Place Arts Complex (not too far, in fact, from Church & State).

While République will stand as a 140-seat restaurant serving a Parisian-inspired “bistronomy” menu, at the other end of the complex, you’ll find Factory Baking Company, which will be run by Manzke’s celebrated pastry chef wife, Margarita Manzke. Margarita will offer easy eats throughout the day, along the lines of freshly baked breads, croissants, and charcuterie assortments, along with light meals. This side of the new project will also have a retail component selling the couples’ favorite cooking products.

An opening date for both concepts is being set for next spring. In the meantime, prepare to hear a lot about this one in the next few months.
