What to Eat at LudoBites 7.0 Tonight, Plus a Last-Minute Res Tip

If you were one of the lucky ones to get a reservation to LudoBites 7.0, you have some mad web-savvy skills because it sold out in a minute. Literally. The popularity of Ludovic Lefebvre's roving restaurant concept--which begins its six-week stint at Gram & Papa's tonight--is equal parts his inventive menus, overall buzz, and wife Krissy's genius social media skills. But Krissy divulged one trick to scoring a last-minute reservation: Check Open Table between 8 and 9am, when that day's confirmations go out via email. A few people inevitably cancel, and you might find some luck within that small window. Now the important part: What's Ludo cooking up this time?

You won't find buffalo heart, which is what the French chef eats on the next episode of Ludo Bites America (the two go to Denver, Krissy's hometown, where he hunts, and she hires Hooters servers for the pop-up), but you will find foie gras ravioli, compressed pig's head, and salt cod panna cotta. The menu will probably change and evolve through this iteration, but for now, here's the opening night lineup.
