Following a few lighting-fast chef shuffles, Palihouse sends word that Waterloo & City co-owner and wunderchef Brendan Collins has returned to Palihouse Courtyard Brasserie to mastermind a new menu. What is the chef cooking up this time?

Similar to Collins’ latest exec-chef gig that finds him preparing suitable pizzas and his excellent barbecued eel and foie terrine to Larry’s in Venice, he’ll mostly be lending his creativity to a new “Petite Assiette” menu, while working with the two chefs de cuisine, Ryan D. Digby and Rui Wang, to fulfill its potential. Collins will put in 20 hours a month at Palihouse for the foreseeable future.

You can check out Collins’ full new menu of charcuterie and small plates for Palihouse online, paying special attention to the scandalously named “hamachi riding ahi bareback.” The hotel also sends us advance news that it will be opening a new Palihouse Cafe on Melrose next year, to accessorize the opening of the brand’s new Palihotel.
