In an interview with Eater, Tinga owner Jerry Baker recounts the 1983 meal he had at Super Rica Taqueria that inspired him to become a taco entrepreneur himself (“the #16 and the chorizo ‘fondue’ still resonates in my senses,” he says). The unlikely taquero is also setting up for a little expansion, claiming that a Tinga taco truck could hit the streets in six months and that he’s currently seeking locations for an expanded Tinga, as clearly the man and his customers feel a little pinched in the eleven-foot space.
