Livello, the new restaurant coming to L'Ermitage in Beverly Hills, won't see its debut until Baby New Year begins crawling. Until then, executive chef Joseph Elevado is taking a page out of the pop-up cookbook with his own Livello Test Kitchen, planned every Thursday evening through November and the first half of December. The chef, torn between Italian and Asian cooking, plans to do both, according to his whims. What will Elevado serve?

Each week, the chef will offer different five-course, pre-fixe menus of Italian and Asian creations for $50 (before booze and tip), served in the restaurant's private dining room. One week might find spaghetti carbonara with Benton's bacon and grilled wagyu with Thai bird chili and garlic ponzu, the next a straight-forward chicken milanese with arugula and white beans and a course of soy-mirin pork belly. Elevado, a former apprentice to Nobu Matsuhisa, will be backed by desserts from pastry chef Angela Ng and herbaceous cocktails by Stephanie Brown.

The first L'Ermitage Test Kitchen dinner will be held at 7:30 P.M. on November 3rd, and every Thursday thereafter until December 15th, with reservations at 310-278-3344.
