New York’s Audrey Saunders Bartending at The Spare Room Tonight

Noted New York mixologist Audrey Saunders will be back in Hollywood tonight to serve customers at The Spare Room. Last time we’d heard from Saunders, she was quickly backing away from her involvement in Mark Peel’s Hollywood supper club The Tar Pit, where she originally signed on as the beverage director.

And speaking of staff shuffles, tonight Saunders will celebrate the promotion of bartender Naomi Schimek to The Spare Room’s own beverage director hot-seat, following the recent departure of Aidan Demarest, who now runs his own bar, Neat, in Glendale. Saunders will prepare six cocktails this evening, intended to pair with the bar’s new fall menu, which also includes Schimek’s tribute to her early mentor Saunders, called “Ode to Aud,” with Japanese cherry green tea-infused gin, jasmine essence, egg white, lemon, and green Chartreuse. The party starts at 8:00 P.M. at this Hotel Roosevelt mezzanine bar and all are invited to join.
