Phuong Tran, the former chef at Long Beach’s Vietnamese restaurant Benley, writes to tell us he’s now popping up in the evenings at Larchmont Larder under the name Saigon Noodle House. From Tuesday through Saturdays, when Larchmont closes for the night at 5:00 P.M., Tran and staff start cooking a market-steered menu that highlights the chef’s elaborate take on pho (using an 18-hour beef broth finished with chocolate mint and lemon basil) that offers meat choices like brisket, tendon, chicken, and Vietnamese meatballs, along with his banh mi, cold bun noodles, braised pork spring rolls, plentiful salads, dessert, and cafe sua da.

The chef also offers a pre-fixe of dishes that he says go beyond “the ranges of pho and bun” and tells us the pop-up is poised to be at Larchmont for the next three months to start. Check out Saigon Noodle House’s menu online and catch Tran while you can.
