Ra Pour opens today, bringing Rancho Cucamonga a taste of Patina veteran Greg Stillman in a clubby 225-seat restaurant that promises outdoor patio dining, along with live music and bands. The chef covers a lot of ground in an international menu that may remind some of the original concept at Raphael. Here Stillman pushes prized proteins to the forefront, merging opulent product with low brow comfort recipes in dishes like a lobster pop in coconut-lemongrass sauce, popcorn with truffle salt, cola-brined pork, Loch Duart salmon with a bacon crust, and chicken and waffles with candied jalapeno.

Elsewhere, he slow cooks eggs for a saffron-tomato sofrito, pairs Carlsbad oysters with beet-green apple mignonette, and grilled duck with fruit pearls, and tops wood-oven baked pizzas with guanicale and rock shrimp on a menu that isn't afraid to tackle paella, miso black cod, and zatar crusted game hen.
