Do your holiday memories swirl with visions of smoky dens and your first sip of booze more than any jiggy sugarplums or whiffs of fresh pine? Marcos Tello and his team have endowed 1886 Bar at the Raymond with an ambitious new winter cocktail menu that seeks to follow that naughty Proustian path, full of hot drinks, spiced grog, and devoted to favorite vices like coffee, beer, and smoking. Never had the chance to eat a cigarette? Come take a look at the menu and finally, live the dream.
On what might be the seasonal cocktail bar's most ambitious menu yet, a "Chicory Flip" finds rye whiskey infused with chicory-coffee and mixed with Yeti stout, a whole egg, and caramelized chicory coffee sugar, while the bar deconstructs Mexican hot chocolate with ancho-chile infused reposado and its own hot chocolate recipe, along with ancho-chile marshmallows.
Smokiness is present in a mezcal-laced "Per-Sin-Amen," while bartender Lacy Murillo is using real tobacco-infused bitters in the "Smoking Jacket," pictured above, employing Irish pot-still whiskey, captured maplewood smoke, and edible orange vanilla ash to relive her memory of taking a sip from a drink granddad might have put his cigar out in, but presumably much better tasting.
A "Coffee and Cigarettes" cocktail is described by Tello as "basically a chocolate version of a White Russian, but it's lengthened with stout," giving it the appearance of coffee and the flavors of chocolate and java. To complement this Jarmuschian libation, The Raymond's chef Tim Guiltinan created a hand-rolled cigarette from edible, flavored paper that adds the taste of vanilla to the drink's chocolate flavor. It even comes served inside of metal ashtray, recalling holiday memories that hopefully don't involve anyone feeding you cigarettes.
