“The Original” at 800 Degrees

800 Degrees, a new 70-seat Neapolitan pizza concept from Umami Burger don Adam Fleischman, with former Michael Mina chef Anthony Carron and partner Allen Ravert, plans to open in Westwood in early January. The concept will find customers customizing their own thin crust pies at the counter, with the promise that it will be fired in the restaurant’s wood-burning oven by the time the customer is done paying, cooked in roughly a minute. What else?

The plan here is to highlight fresh ingredients and traditional technique on a small list of Carron’s creations, while the concept will tilt more heavily towards encouraging guests to design their own pies.

Produce and charcuterie will be procured locally, while fresh mozzarella will be supplied by DiStefano Cheese and gelato by LA Creamery. Expect Fleischman’s dedication to craft beer to play a big part on tap and in bottles too, in this counter-service restaurant.

And since Nancy Silverton and crew dared challenge Umami’s burger biz in The Grove, 800 Degrees is planning a mozzarella bar of its very own! Check out the website and sbe be advised, “more locations coming soon.”
