Sublime Food Lounge, the restaurant that replaced Wilson in Culver City at the start of 2010, will now be replaced by a restaurant named Batch 8631 at the end of 2011. Batch is owned by partners James Couey, a former manager at Church & State, and Mathew Gries, a former mixologist at the same Downtown bistro, and before that, Westside Tavern. Their new spot is intended as a spirited neighborhood eatery, with both indoor and outdoor space, that specializes in Gries' lauded small batch cocktails, as well as local ingredients as prepared by former Ford's Filling Station chef de cuisine, Sal Roldan, on changing, seasonal menus.
Batch is planning its opening in early December, currently seeking out staff for a slew of positions. Dinner will be the focus here, with no mention yet of specific dishes, though we see Batch recently catered a school fundraiser with a few fresh hors d'oeuvres.
