Chef Megan Logan will take guests through tips and practices on aging and identifying cuts, followed by a sampling. First up is game meats on January 20th, with future classes including a look at animal cheeks, grass versus corn fed beef, and U.S. versus New Zealand lamb, with $40-60 reservations mandatory at 213-680-0330.
