We rejoice over the renewed energy found in Palihouse Courtyard Brasserie’s kitchen these days, where chefs Ryan Digby and Rui Wang are turning out remarkable dishes and desserts, with consulting help from Brendan Collins. The smooth transformation makes us ever hopeful for the prospects at PaliHotel, Avi Brosh’s next hotel project opening on Melrose on February 1st with just 32 rooms and a “European Inn” aesthetic. And what about a place to eat?

The restaurant due here is called PaliKitchen, a modern coffee shop that will come in late February, riffing on cafe classics and comfort foods like toasted sandwiches called “toasties,” milkshakes, smoothies, baked goods, soups, and salads, served for breakfast, lunch, and dinner, as well as gourmet coffee and tea. As of today, no word on whether Waterloo & City and Larry’s chef Collins will have a hand in the dishes here, though minibars will come stocked with Dean & DeLuca products. You know, because minibars don’t charge enough as it is. The hotel’s website is now up, while we’re waiting to catch the menu as it lands on the site’s dining page.
