Sai Sai Ditches Sushi, Turns Into Stripped-Down Noodle Bar

Sai Sai at Downtown's Millennium Biltmore hotel closed over the holidays to free itself of its Japanese focus and sushi bar and undergo some cosmetic surgery to become a fast casual concept with walk-up ordering and added encouragement to kick back and stay awhile over free WiFi and multiple TVs. Soft-opened under a new look of blonde wood with bamboo and driftwood accents on January 30th, the restaurant is now called Sai Sai Noodle Bar and features a simpler selection of gourmet noodle dishes from Nobu West Hollywood vet and O.C. loc' Jonathan Shin, who's refining the recipes in the kitchen, lead by exec chef Thomas Ryan.

Shin is the seed of a Korean mother and sushi chef father born in Japan. His protracted menu includes ribeye pho, skirt steak galbi ramen, kimchi ramen with pork belly, said to be from a family recipe, and miso ramen with lobster dashi, along with apps like shishto peppers with unagi sauce and Hawaii's Bubbies Mochi for dessert. Beer (four of six from Death Valley's Indian Wells), wine, and sake are a part of the new picture, too, with two-dollar brews and four dollar wines daily from 3:00 to 7:00 P.M.
