Blue Plate Taco, the forthcoming Mexican concept coming to Santa Monica’s Shore Hotel from the owners of Blue Plate and BP Oysterette, announce that the restaurant won’t arrive until it’s time to salute old glory, with plans to open this summer on July 4th. The upscale, healthier-leaning taco joint cites its influence as coastal Mexico, with plans to use locally-farmed ingredients, seafood, and organic meats over lunch and dinner in a bright, modern setting. The tortillas will be (thankfully) homemade, the salsas unique, and the ceviches will vie for attention from the lobster truffle tacos. In addition, expect a focus on mixology, with handmade margaritas, as well as desserts like fresh fruit raspados and churros.
