Masa Takayama is taking a bite out of of Benihana by bringing a new teppanyaki project to Las Vegas’ Aria Resort & Casino in a restaurant named Tetsu planned to reside in the chef’s barMASA this August. The griddle restaurant is a replacement for the chef’s shabu-shabu spot, Shaboo, which will shutter after its last service tomorrow. The set-up for Masa’s first foray into teppanyaki involves just four blackjack-style tables and two communal grills (one will seat 20, the other 19), for an intimate, personalized eating experience. What can you expect to see sizzling here?

At the heart of the restaurant will be a spread of meats, seafood, and veggies, offering diners the opportunity to hand-select the cuts, sizes, and sides that will be prepared by Masa-picked teppan chefs. This will not be Kabuki, obviously, as Tetsu will offer dishes not iontended to soar though the air like lobster sashimi ceviche, toro tartare with caviar, Butterflied Scottish langoustine, and Wagyu tartare. The restaurant will also offer a tataki selection of traditional, hand-pounded, seared and marinated meats like filet mignon with soy vinaigrette and Wagyu ribeye, and sides like seafood udon and “Kobe” garlic fried rice.

Guests will enter through barMASA to reachTetsu, which plans to open only in the evenings, from Wednesday to Sunday. Meanwhile, we’ll alert Tracy Morgan of this new five-star teppanyaki experience.
