Melisse Presents Nightly "Foie For All" Menu

Now don't you go thinking Josiah Citrin is all flip-flops, guayaberas, and sand-tousled hair these days just because he's flipping a few burgers for the good folks of Maui. Back home in his native L.A., Citrin is introducing a nightly multi-course menu comprised entirely of foie gras dishes to celebrate the soon-to-be-verboten delicacy at his Michelin-starred Melisse. Called "Foie for All," the $185 menu should probably be called "Foie for The Fairly Loaded," seeing as it doesn't really rival the lonchera for an egalitarian eating experience.

Nonetheless, Citrin is taking a stand for the rights of embattled foie fans, defiantly declaring, "I don’t agree that the state should regulate what we serve on our menus; I’ll comply, but until then, I feel our guests that request foie gras should be able to enjoy this delicacy while they can." To that end, the chef and his chef de cuisine, Ken Takayama, are pulling out all the stops in dishes like foie gras flan, truffled foie agnolotti with chicken oysters, and a dessert course featuring foie as the final blow.
