The Reservation Line Is Now Open For Cuba Libre’s Second Paladar Pop-Up

The last time Cuba Libre’s Guillermo Pernot hosted one of his Paladar pop-ups with a visiting Cuban chef, all 240 seats — that’s 40 seats at six pop-ups over three nights — were booked in a matter of days. We tell you this, because Pernot just announced today that he’s gearing up for the second installment of the Paladar series. This one will bring Chef Alain Rivera Santana, whose Doctor Café is one of Havana’s hottest restaurants, to Cuba Libre for three nights (June 19 through 21). Reservations for the exclusive dinners are open now, but probably not for very long.

Alain Rivera Santana is one of Cuba’s premiere rising star chefs. He’s earned this reputation for his delicate touch and simple coal-fired grilling. For the $45, four-course dinner at Cuba Libre, he and Pernot will collaborate on such dishes as Merluza al Escabéche, cod with chile-vinegar sauce, lamb tongue and beet salad; Canelones de Cangrejo, fresh corn pasta cannelloni with sweet crab meat enchilada filling; Atùn, grilled yellowfin tuna with malta-honey reduction and ruby red grapefruit-lavender supremes; Sopa de Mango, chilled mango soup with Cuba Libre’s private label five-year aged rum ice cream; and Dulces, petit fours for guests to take home.

Pernot has a third Pop-up Paladar scheduled for October that will feature with Chef Angel Rafael Roque Gomez.
