Award-winning chefs and Pulitzer Prize-donning critics both got their last jabs in at the foie gras narcos yesterday, sharing one thing in common: Michael Cimarusti, who was quoted in both The L.A. Times and The Wall Street Journal on the fleeting days of the fat-shellacked filter organ. Rather than get his toque in a twist trying to replicate foie, Cimarusti plans a silent-but-sportive protest on his menu at Providence, intending to leave a blank space on the menu with an inscription that simply says, “formerly a foie gras dish.” Touché chef!
