In January, we spread the news that Sascha Lyon, the Delphine chef, formerly at New York’s Pastis and Balthazar, would be arranging new menus for a fresh IDG project called Soleto Trattoria and Pizza Bar in Downtown, taking over Patina’s old Zucca space. The trattoria, designed by Studio Collective, is currently plotting next its coming out party next month in the financial district. Let’s take a look at the menus.

Lyon plans a straight-forward, “gas-assisted wood-oven” roasted output of Southern Italian here, with antipasti of meatballs al forno, flash-fried calamari, rigatoni with sweet sausage, subs, paninis, a house 801 burger with Neuske’s bacon, branzino Milanese, pizzas that stay traditional (tomato pie with herb goat cheese and wild arugula, smoked speck with Fresno and Anaheim chilies) and go a lil’ bit cray (potato and bacon, cotto ham and honey-grilled pineapple).

Soleto will offer Italian wines, beer, and cocktails, including a selection of its own in-house limoncello. The building rocks original wood floors, white wash brick walls, and vintage tiles, while chandeliers of glass swing overheard, and a circular bar and fireplace help differentiate three specific spaces within, as a garden patio charms outside.
