This Sunday, Hollywood’s Los Balcones de Peru starts a new ceviche brunch. Some lucky swimmers will get sliced and find their way into tiraditos and others cubed or chopped for a plunge into different ceviche sauces, including a clasico of ginger, garlic, and celery, a spicy rocoto, and a norteno style that sees chopped white fish served with onions and aji limo.

Assereto is especially excited to debut a “mixture of Peruvian peppers with yuzu and soy sauce” that he’s labeling “Chinese Peruvian” ceviche. The restaurant will also serve three types of causa, small plates like lomito al jugo, bottomless chabela beer cocktails, and fried fish with criolla.

To mark the occasion, a band will also playing from noon to 3:00 P.M. What’s that? Did someone really just ask for El Cóndor Pasa? Ay! Bring on the chabela. Brunch starts at Balcones de Peru at 10:30 A.M. this Sunday.
