Patina’s C+M Opens Today at LACMA

Patina Restaurant Group opens C+M at LACMA today. Standing for Coffee and Milk, the 1,000 square-foot “chef-driven coffeehouse” serves espresso and coffee drinks from Intelligentsia, along with a menu of sweets and savories from Ray’s award-winning pastry chef Joshua Graves, libations from mixologist Paul Sanguinetti, and a menu of milk sorbets that rely on the organic dairy of Straus Family Creamery.

The frozen sorbets will be found in both “milkwiches,” where it will be pressed between freshly baked cookies, as well as in “milk handshakes,” which are hand-mixed shakes made in two daily flavors that a press release says will include toppings from Harry’s Berries and Choco Vivo in Venice (Sanguinetti will also offer a daily alcoholic version with the likes of Fernet and 12-year aged Elijah Craig whiskey).

Though currently absent from C+M’s PDF menu, food options will include sandwiches on Graves’ daily baked baguettes, including one with Benton’s country ham with gruyere, and truffle butter and another with Windrose Farms’ heirloom tomatoes, burrata, and arugula taken from the onsite garden at Ray’s.

Graves will also offer hand pies with peaches from Frog Hollow Peach Farm and his take on Pop-Tarts, which use farmers market produce instead of Smucker’s schmear for flavors like bacon date, lemon lavender, and strawberry pistachio using Harry’s Berries. Graves will also prepare single sized cakes, with a “black velvet” flavor and another one with Elvis in mind, highlighting his favorite combination of bacon, peanut butter, and banana with golden butter cake.

Taken with a hot chocolate from Choco Vivo or a boozy milkshake, C+M sounds like a great start or end to the day at LACMA from a company that consistently nails its new concepts.
