Colonial Wine Bar is a new sipping spot and vine-paired-to-dish restaurant hitting Melrose on July 18 under the ownership of David Haskell, the former owner of Bin 8945 who worked at Aquavit, Le Cirque, and Guy Savoy and was breifly involved with Vertical Wine Bar, Cafe Livre et Le Marche, and the Joseph Mahon pop-up known as The Magnum Crew locally. Last month, Eater reported on Haskell’s take-over of the TiroVino space with partners Carolyn and Mary Anne Reyes to launch Colonial under consulting chef Alex Ageneau of The Royce and Jet Tila’s Bistronomics pop-up. Today, Grub Street learns that Ageneau is now completely off of the project, with his place being taken by Pippa Calland, New York’s former Le Madri and Luna Park chef who was the opening executive chef at Brentwood’s Villetta before leaving that post last fall, just seven months after the Italian cracked its doors. Haskell’s new project aims to master beer and wine pairings with food, in marriages like roasted marrow bones with oxtail marmalade, served with NV Jean-Claude Thevenet blancs de Blanc, and deviled eggs with pickled jalapenos served with a Hitchino White Belgian from Japan (the starting wine list will feature 55 bottles, nine beers, and three sakes). A menu begins with small plates, features flatbreads, cheese, and charcuterie, and ends with entrees like a house croque with Serrano ham and a plate of bone-in Jidori.
Colonial plans to offer dinner seven days a week from 4:00 P.M. to midnight, with a three-hour happy hour, and future plans for lunch and weekend brunch, with seasonal wine maker dinners and quaterly happenings with guest-chefs.
Calland’s first full dinner menu and libation selection is currently online, while Colonial Wine Bar plans to debut next Wednesday, July 18.
