Sin City’s Bachi Burger Opening on Sawtelle This Fall

Following last year’s importing of Fukuburger to Hollywood, Las Vegas is sending us another one of its Asian-influenced burger joints. Lorin Watada, the chef and owner of Bachi Burger, is planning a fall opening of the restaurant on West L.A.’s ever-booming Sawtelle Blvd. in an undisclosed space currently under construction. Short for “hibachi,” and also a phrase recapping the golden rule, the former Roy’s chef is all about big burgers with rich tastes of Hawaiian, Chinese, Southeast Asian, and Japanese ingredients and profiles, as well as bao sandwiches, pickles, loco moco, fried chicken, sausage, and steamed buns, along with servings of craft beer, sake, milkshakes, boba drinks, house-made soda, teas, milk-teas, and coffee.

Watada’s ingredient-driven concept has been widely applauded by Sin City critics, while the chef tells Las Vegas Weekly he’s looking to an opening in late November or early December, and has additional plans to bring the concept to O.C.

Looking at the menu, the concept seems to be different enough from Japanese-accented Fuku and Umami Burger to not cause a beef, as well as Hawaiians like Shaka Shack and Josiah Citrin’s anticipated Sure Thing Burger.

But those oxtail chili fries may face some stiff local competition and a burger with sautéed shiitake and eryngii mushrooms, caramelized bacon, sweet onion marmalade, and Gruyere does sound a little like something Adam Fleischman would cook up. At least the man is keeping his budding ramen concept off of Sawtelle for now.
