Bow & Truss, the Burbank restaurant opened this summer by Knitting Factory Entertainment, owners of The Valley’s Federal Bar along with several NYC properties, is launching lunch this coming Tuesday, October 23. The modern latin menu, under chef Stefhanie Meyers, features four open-faced baguette bocadillos with ingredients like achiote pulled chicken with cotija cheese and pickled shallots, plus crab with harissa, and sea bass with carrot slaw and avocado. In addition, there’s a pork cheek guisado and a butternut squash soup with almond milk, cumin, and cinnamon (lord forbid it gets cool enough for soup again), a mussel salad with Basque Idiazabal sheep’s milk cheese, and five tacos served three per plate at seven and eight dollars, including chicken confit in duck fat, Mexican tiger shrimp with lime soaked cabbage, pork belly, and sea bass. Lunch will be served from 11:30 A.M. to 3:00 P.M. Tuesday through Saturday.
