While one of Flynt’s two aides-de-camp brushes his hair and presents him with a choice of toothpicks, Flynt is regularly found at central table 29, typically attended by the same waitress, who knows more about his salt requirements than her co-workers, as Flynt’s Bentley idles outside. Culina now even has a dish named for Flynt, and it’s surprisingly not from the crude-o bar, but a seafood salad with eggs, garbanzo beans, shrimp, and Dungeness crab. Hustler’s hustler says, “They at first tried to skimp on the seafood, and I told the chef: ‘Don’t even try it. Fill that bowl with goodies.’” He may be able to enjoy it too, if Governor Jerry Brown wasn’t calling again to interrupt the man’s meal.
