Just last Tuesday, we learned that British chefGavin Mills was leaving Hollywood’s Wood & Vine for a taste of something new. Today, news arrives that Mills is being hired by Suzanne Goin and Caroline Styne to lead the kitchen as chef de cuisine at Tavern in Brentwood. Starting November 13, Mills will take the place of Tavern vet Dennis Kelley, who was with the restaurant since its first days and chef de cuisine for the past year.

Having picked Mills from among a few potential candidates, Goin says, “We knew that Gavin would fit easily into the sensibility of what we try to do at Tavern…he has a clear understanding of my style, which is critical for anyone Caroline and I depend on that will represent our restaurants. I’m confident that he can cook and plate my recipes exactly as I intend them to be presented.”

No mention of Mills making any major changes to the menu just yet, though house-made charcuterie will make its way onto the menu with the chef’s appointment. Mills can still be found cooking at Wood & Vine for the next couple of week until he takes over at Tavern.
