Today’s mall-goer wants plank-roasted salmon, bio-dynamic Grenache, and a seasonally shifting menu to put their label-concious savvy on display, leaving Cinnabon and corn dogs to the window-shoppers. The contemporary mass-craving for whole foods is leading to the rapid spread of Seasons 52, a healthy-leaning grill restaurant with a master sommelier-crafted wine list pre-packaged from Darden Group, the same force behind Red Lobster, Olive Garden, Capital Grille, and Yard House.

The restaurant opens today in Century City’s Westfield, bringing its taught service, lengthy list of flavored-martinis and international wine finds, farmer-procured produce, and wood-roasted, oak-grilled whole proteins to over 8,000-square-feet of space, including an edible wall, piano bar, and fire box patio.

Dinner and lunch menus promise every dish comes in at under 475 calories, surely a plus in any American mall, where the typical snack makes the waistline on those pants you just bought obsolete the second you get home.

The restaurant will build upon today’s opening with the debut of a location this winter off Santa Monica’s Third Street Promenade, where it will do battle with such consumer-friendly earth-to-eater concepts as True Food Kitchen. If it’s between these guys or Wetzel’s Pretzels, diners don’t lose either way.
