Pichet, the weekend-only pop-up we first introduced you to back in August, appears to be taking over the space at Venice’s B1 Breadshop. Yo! Venice! reports that B1 is handing the reigns over to the restaurant, which will grow into a wine bar, bakery, and appetizer-based French bistro concept with 25 seats inside and 10 on a rear patio.

Having been to the pop-up version of Pichet, we can attest that the Cali-Provençal cooking, using organic meats and local produce in traditional bistro dishes, is both accurate and inspired, quietly giving better bistronomy than some of the places that specifically trumpet such styles. Still, here’s hoping that next time a $14 serving of coq au vin may include more than a single, sparse leg on the plate and that a three-course dinner for two may clock in at something more leisurely than a brisk 25 minutes. We shall soon see, as Pichet’s opening is predicted as soon as sometime later this month.
