Joseph Mahon, the former Bastide chef gone solo in Fullerton, is parting ways with Early Bird, the breakfast-heavy restaurant he launched back in July, in order to devote himself to Burger Parlour, the Downtown Fullerton U.S. comfort food concept he followed up with in September. Frank DeLoach, a Mezze and Playground veteran who worked at Mahon's side as chef de cuisine, is stepping up to the executive chef position at Early Bird, introducing new dishes like a Malaysian randang waffle and getting set to debut the restaurant's first dinner menu this May.
