First Look Into The Space, Food, Drinks, and Menus at Ricardo Zarate's Paiche, Opening April 2 in Marina Del Rey

"This is the restaurant we always wanted to open," Stephane Bombet tells Grub Street in regards to Paiche, citing the deep appreciation for seafood he shares with his partner, Lima-born culinary sensation Ricardo Zarate. After boosting the bar for Peruvian staples at Mo-Chica in Downtown, then intensifying anticucho, tiradito, and causa with a gourmet brush suited to Beverly Hills at Picca, Zarate is now focusing his efforts on pristine seafood, Amazonian ingredients, and the Japanese currents that run through Peruvian cooking and culture at Paiche, surely the most exciting restaurant to hit Marina del Rey in generations. A relatively small space at the root of the new Stella condo complex, Paiche is named for the primordial Amazonian river fish recently saved from the brink of extinction, an unruly length of incandescent silver and pink scales with sweet, tender flesh. Taking its inspiration from the beautiful monster, Paiche's space is a chic, sleek nod to the deep with nary a porthole or captain's wheel in sight.

A massive patio lined with reeds and a volcanic rock fireplace looks to be the ideal roost for a spring fling over the team's perpetually impressive cocktails, in which rocoto cream may top a sweet and tart mezcal creation and pisco reigns supreme. Zarate tells Grub Street that Marina del Rey was the first place in L.A. he stayed when visiting from London prior to moving here, and the presence of this inventive, skilled chef could help usher in a new era for the sleepy seaside neighborhood of too many middling chains.

With an arsenal of clever ideas, bracing ingredients, and a tight team, Paiche portends to be one of the biggest openings of the year and a true boon for the Marina. In fact, the first night's service is already slated to be slammed to the gills. The restaurant opens next Tuesday following two Food & Wine "Best New Chef" events and a few friends and family services this week.
