Alex Reznik, the Top Chef and former Cafe Was, La Seine, and FigOly kitchen-captain who recently introduced stinging nettle sweetbreads to This Is Not a Pop-Up, will be cooking every Tuesday and Sunday through May at Downtown’s One-Eyed Gypsy. The offal-inclined Reznik will offer seven dishes, including a full fried chicken, banh mi-style bacon niblets on the bone, a lamb tongue “CLT” on challah, rabbit and oxtail ragu, chicken fried oysters with mussels and marrow, and some kind of cut that’s so obscure it’s simply labeled “funky stuff” when served with a kale salad.
