Early Dish Details Leak Out of Ludo Lefebvre’s Trois Mec

No surprise that the first look at a menu at Trois Mec, the forthcoming new Hollywood restaurant from Ludo Lefebvre with Animal and Son of a Gun chefs Jon Shook and Vinny Dotolo, should come from KevinEats, the blogger who orders and shoots every dish at newly opened restaurants to share with his followers. Observing the restaurant’s ban on photography (a real reversal from the days when LudoBites included a light-box for shutterbug food bloggers), Mr. Eats appears to have taken home a ten-course menu signed by all three chefs (as well as a fourth “mystery mec“). The bill of fare includes such dishes as buckwheat popcorn, radish with egg custard and butter crumbs, potato pulp with milk skin, brown butter, bonito, onion soubise, and Salers cheese, and beef tartare with shallot broth and fermented red beets.

Of course, the tight-lipped project will likely see a lot of change before the debut of its $70 prix-fixe menus later this spring. Still, these early dishes provide some semblance of what to expect, finding the balance of Animal’s muscle-bound cooking and precious ingredients fusing with Ludo’s classic French discipline and dedication to pushing the envelope of flavor and presentation into experimental territory.
